How to make Gajar Ka Halwa at home:


For the Rabri:
– 3 cups milk
– 3 tbsp sugar
– 3 small elaichi, seeds crushed
– 4-5 saffron strands

For the sugar syrup:
– 1/4 cup sugar
– 1/4 cup water
– 4-5 saffron strands

– 3 tbsp ghee
– 5 slices bread, cut into half
– chopped nuts, optional


– In a large saucepan, boil milk until it becomes half, stirring occasionally. This will take about 20-25 minutes. Add the sugar, elaichi seeds and saffron strands. Mix and cook for another 5-10 mins. Let it cool. Refrigerate until use.
– In another saucepan, heat sugar and water until the sugar melts completely. Stir occasionally. Add the saffron strands and let the syrup cook until it thickens and becomes thread like consistency. This should take about 5-7 mins. Keep aside.
– In a medium pan, heat ghee. Fry the halved bread slices until golden brown. Place them on tissue paper to dab extra ghee. Pour sugar syrup onto the bread slices, followed by the chilled rabri. Garnish with chopped nuts.
