Vegan Strawberry Cobbler
Valentines Day Dessert Recipe
Serves: 2

This recipe actually came by accident. I was having the darnest time trying to make a strawberry souffle, but I knew that I could put strawberries in my old cobbler recipe. Low and behold, though I had never had it before, I googled strawberry cobbler and it is actually a thing. So here you go, this is how to make strawberry cobbler.

1 tbsp vegan margarine, like earth balance
1/4 cup self rising flour
1/4 cup sugar
1/4 cup vegan milk, like almond, coconut, or soy
Dash of cinnamon and vanilla extract
2 large strawberries, diced

Preheat oven to 375 degrees fahrenheit. Divide the vegan margarine between two ramekins an place in oven while preheating. Mix self rising flour, sugar, and vegan milk. Mix in the vanilla extract and cinnamon. Add the strawberries in, but mix only until evenly dispersed.
Remove ramekins from oven and divide batter evenly between the two.
Bake for 20 minutes, then allow to cool. I would suggest cooling around ten minutes, because you do want to serve these hot/warm.
